Why can't you use Google Fonts or Web Fonts in your email signature?
Even though new technologies are available to the web browser, for example the @font-face CSS query which enables you to load any font you like into a web page, the @font-face selector is not supported in the vast majority of email software.
When you send a HTML signature using your email client, most email clients strip out the head of the HTML which is where the web font or Google font is specified.
